What is the difference between a pork loin chop and a sirloin chop? A "loin" pork chop is a cut taken from the center of the pig's back, while a "sirloin" pork chop comes from the back of the loin near the hip. A sirloin chop is a lean and tender cut, so long as you are careful not to overcook it.
